Returning for the first time in several years, Red Dot 2021 was open fermented in a cherry wood Foudre with HOF’s resident mixed culture. Once primary fermentation was complete, this Wild Ale went to rest into red wine barrels prior to a final fermentation atop Montmorency Tart Cherries from @brecknockorchard and wildflower honey from Foam and HOF’s Nordic Farm Apiary. Pleasant funk combine with light cinnamon notes and cherry flavored lifesaver before a clipped, dry finish.
