As with most of our beers, WeldWerks Saison is our own innovative take on the classic style that originated in the Wallonia region of southern Belgium during the 19th century. We use a French Saison yeast and ferment warm, in the Saison tradition, starting at 70 degrees and rising to nearly 85 degrees. This fermentation profile lends notes of tangerine, lemon and apricot, complemented by black pepper and clove. Using exclusively Amarillo hops adds even more complexity to the fruity, citrus character of the yeast, all of which is accentuated by the moderate hop bitterness, dry finish and effervescent-like high carbonation.
