The evolution of Stout began in 18th century as a deviation from Porter, commonly brewed in England and Ireland. It has been darker, stronger, but there had been no diffeleace between the London and Dublin version. Such a difference emerged in 1817 with the invention of drum roaster enabling the creation of new superbly dark malt sorts. Conservative Englishmen opted not to exploit the new opportunities, but a brewmaster of Dublin brewery of Guinness started experimenting. By gradual changes in the recipe, his stout was becoming still drier and more bitter. The last significant change occurred in 1880 when a new taxation law came into force, which has made the brewing of strong beers unprofitable and Guinness made their stout much weaker. In this weaker, thy and bitter form, it is retained as an Irish Dry Stout to present date. We prepared the one of ours following an over a century old tradition out of Pale Ale malt, roasted unmalted barley and a little oatmeal cereals. The absence of caramel malt, otherwise typical for English Stouts made this Irish Stout very light and dry, with a pleasant chocolate bitterness. This beer is draught in a special way invented by Guinness in 1959 providing an unsaturated beer with creamthick nearly white head and a creamy mouth-feel.
